A postinstall script is just like any other shell script. I don't see any
reason why it wouldn't.

Well, postinstall scripts are usually run with /bin/sh, which means that
you'd have to use the following syntax:
PATH="/usr/X11R6/bin:$PATH"
export PATH
(note the quotes, BTW, as many Windows paths have spaces).
