Almost there - just use the "following-sibling" axis in XPath.
<table>
<xsl:for-each select="thinglist/thing[position() mod 2 = 1]">
<tr>
<td><xsl:value-of select="@value"/></td>
<td><xsl:value-of
select="following-sibling::thing/@value"/></td>
</tr>
</xsl:for-each>
</table>
