I think you just want
<xsl:template match="*"/>
 <xsl:copy>
  <xsl:apply-templates/>
 </xsl:copy>
</xsl:template>

<xsl:template match="text()">
 <xsl:value-of select="translate(.',&#10;,&#9;',  ')"/>
</xsl:template>
